Parmigiano Reggiano is a  hard, aged, cows milk, Italian, unpasteurised cheese.

Parmesan probably needs no introduction, being one of the world's most iconic cheeses.  The cows who produce the milk are fed only on grass and hay and the cheese is aged for at least two years producing complex umami flavours and a granular, flaky cheese.
