Manchego Anejo is a Spanish, hard, unpasteurised sheeps cheese.
Our Manchego is specially selected for us by our wonderful Spanish supplier. It is at least a year old, from La Mancha in Spain. It is hand crafted from pure unpasteurised Manchega Sheep's milk.
It is hard, nutty and lamby with a lingering tang. The distinctive herringbone rind is from the grass moulds used to make the cheese. Lovely eaten thinly sliced as a tapas with sherry.

Winchester is an English hard, vegetarian, pasteurised cows cheese.
Made on the edge of the New Forest by our good friend Mike Smales and his team at Lyburn, Winchester is a brilliant cheese. It is somewhere between a Gouda and a Cheddar in both flavour and texture.
The farm uses milk from its own cows and the herdsman Phil knows them all as individuals. The cheese is creamy and slightly nutty with tiny holes throughout. We sell our Winchester at about 9 months old.

The texture becomes harder and crumblier with age and the flavour becomes rich with umami which makes Old Winchester a wonderful vegetarian alternative to Parmesan. It is equally fabulous on a cheese board or in cubes as a tapas.

Smoked Winchester is an English, semi-hard, pasteurised, smoked, vegetarian cheese.
The smoked version of a young Winchester, this beautiful cheese is made by our friend Mike Smales and his team at Lyburn Dairy on the edge of the New Forest.
The large cheese is smoked over oak as a whole, rather than in pieces like some smoked cheese, this results in a subtle smoky flavour running through the smooth textured, creamy cheese.
