Chaource is a French, unpasteurised, soft, cows milk cheese.

Another crowd pleaser from the Champagne region of France. Chaource starts out creamy yet crumbly with a hint of mushroom becoming almost runny when fully ripe.

it goes well with Chablis, Champagne and Sancerre.
