Fleur de Maquis is a  hard, herb-covered, unpasteurised, Corsican sheeps cheese.

A beautiful hard sheep's cheese from the Corsican hills.  The cheese is covered entirely with herbs from the region such as fennel seeds, juniper, thyme and savoury with the odd hit of chilli.

The cheese is sweet and tangy with the herbal edge you would expect.
