Livarot is a French, unpasteurised, washed rind cheese.

One of Normandy's oldest cheeses, Livarot is also known as "The Colonel" due to the five reed bands that encircle it resembling a colonel's five stripes.

Livarot is washed in brine leaving a silky smooth rind, a moist and smooth, slightly springy texture and a perfumed piquancy.
