Our Mimolette is a French, unpasteurised, aged, hard cheese.

We sell a particularly well aged Mimolette, at least 2 years old which has a distinctive mited crust.  As a whole cheese it looks like a pitted cannonball and is about as difficult to cut!

Inside the cheese is a vivid orange colour from the annatto used in the cheese-making process, a natural colouring from a shrub which also lends a sweetness to the mix.  Mimolette has flavours of caramel and roasted nuts and is one of our personal favourites.  It is matured in humid cellars in Lille, France and has been banned in the U.S. because of the cheese mites that are crucial to its aging process.
