Mrs Kirkhams Lancashire is an English, hard, vegetarian, unpasteurised, cows milk cheese.

 

Now made by Mrs. Kirkham's son Graham, this is the one and only farmhouse Lancashire made in the traditional way and using unpasteurised milk and it certainly shows.  It is at once tangy, creamy, rich and mellow with a long finish and a wonderful, almost fluffy texture.

The cheese has been made on the same farm for generations. The morning milk is added warm straight from the cows to the previous evening's milk which has been cooled overnight. The curd from this process is added to the curd from the day before and it is this process which creates the wonderful light and crumbly texture unique to this cheese. The cheese is then cloth bound and buttered and left to mature.
