Pecorino Moliterno is a hard, Italian, truffle laden, unpasteurised, sheeps cheese.

This is about as sexy as cheese can get, the flavour of this cheese is mind-blowing.

Made in Sardinia it is matured for about a year before being dosed with rich seams of Italian summer truffles and aged for a few more months to let the truffles' intense, earthy flavour permeate the cheese. Not for the faint hearted, a little of this cheese goes a very long way. Try it grated on fresh pasta or with a glass of Barolo.
