Winchester is an English hard, vegetarian, pasteurised cows cheese.


Made on the edge of the New Forest by our good friend Mike Smales and his team at Lyburn, Winchester is a brilliant cheese. It is somewhere between a Gouda and a Cheddar in both flavour and texture.

The farm uses milk from its own cows and the herdsman Phil knows them all as individuals. The cheese is creamy and slightly nutty with tiny holes throughout. We sell our Winchester at about 9 months old.
